TIMES JAZIRAH, JAKARTA – Nestled within the verdant landscapes of Kabupaten Gresik in East Java lies a culinary tradition that transcends time. Sanggring Kolak Ayam, a dish steeped in history and tradition, has woven itself into the cultural tapestry of the region, serving as a symbol of resilience, faith, and community spirit.

The roots of Sanggring Kolak Ayam stretch back five centuries, to the era of Sunan Dalem, a revered figure in Javanese Islamic history. Sunan Dalem, the son of Sunan Giri, encountered a grave illness during the construction of a mosque, defying the remedies of his time. Faced with adversity, he turned to prayer and received divine guidance, leading to the creation of a unique dish – Kolak Ayam.

The name "Sanggring" carries profound significance, embodying the struggle of a revered figure in distress. Derived from "Sang," denoting royalty or reverence, and "Gring," signifying illness or affliction, Sanggring epitomizes the journey from affliction to healing, from despair to hope.

According to local lore, the transformative power of Sanggring extends beyond culinary delight. It is believed that consuming this dish can alleviate various ailments, a belief rooted in centuries of tradition and communal faith. As the dish became synonymous with healing, it evolved into a staple of Ramadan festivities, particularly on the auspicious night of the 23rd of Ramadan.

In Desa Gumeno, the custodians of Sanggring Kolak Ayam, the tradition is more than just a culinary practice – it is a way of life. Recognized as intangible cultural heritage by the Ministry of Education and Culture of the Republic of Indonesia, Sanggring serves as a beacon of cultural pride and communal unity.

Aminatun Habibah, the Vice Regent of Gresik, speaks passionately about the significance of preserving Sanggring for future generations. "With the 500th anniversary approaching, efforts to safeguard this tradition have intensified, with community leaders and stakeholders rallying behind the cause," she said.

Central to the preservation efforts is the active involvement of the younger generation. In Desa Gumeno, children are immersed in the rich history and traditions surrounding Sanggring, ensuring that the legacy endures for generations to come. Educational initiatives, workshops, and cultural exchanges serve to impart knowledge and instill a sense of pride in the community's heritage.

As the village prepares for the annual ritual of preparing Sanggring Kolak Ayam, anticipation fills the air. From the selection of ingredients to the meticulous preparation process, every step is infused with reverence and tradition. The aroma of spices fills the air, invoking memories of generations past and uniting the community in a shared celebration of heritage and faith.

In a rapidly changing world, where cultural traditions often fade into obscurity, the resilience of Sanggring Kolak Ayam stands as a testament to the enduring power of tradition. As the flames of the cooking fires illuminate the night sky, they serve as a reminder of the timeless values of faith, community, and culinary artistry that continue to bind the people of Gresik together.
