TIMES JAZIRAH, JAKARTAMadumongso is a cherished traditional Indonesian confection originating from Ponorogo, East Java. This sweet treat is crafted from fermented black glutinous rice (tapai), coconut milk, and sugar, resulting in a distinctive sweet and slightly sour flavor profile.

The creation of madumongso begins with fermenting black glutinous rice to produce tapai, which imparts a unique tangy taste. This tapai is then combined with coconut milk and sugar, and the mixture is cooked slowly over low heat for approximately eight hours until it thickens into a dense, sticky paste.

After cooking, the mixture is left to cool for about a day before being wrapped in small portions using colorful paper or plastic, enhancing its visual appeal and convenience.

Cultural Significance

In Javanese culture, madumongso holds a special place, often featured in traditional ceremonies and festive occasions—particularly during Lebaran (Eid al-Fitr). Its presence symbolizes joy and is commonly shared among family and friends during celebrations.

During Lebaran, demand for madumongso increases significantly. Febyana Wijayanti, a madumongso producer from Caluk Village, Ponorogo, shared her experience of selling the treat.

“On regular days, I can make about 3 kilograms per day, but during Lebaran, it can go up to 10 kilograms because of the many orders. People usually buy it as gifts," she said.

Regional Variations

While madumongso is a staple in East Java, variations of this confection can be found throughout Indonesia. In Tulungagung, for example, a unique version incorporates pineapple and cassava tapai, offering a different twist on the traditional recipe.

This adaptation maintains the classic sweet and tangy flavor while introducing new textures and tastes. Today, madumongso remains a beloved snack, available in traditional markets and specialty stores.

Its rich flavor and cultural significance continue to resonate with both locals and visitors, preserving its status as a cherished Indonesian delicacy. Entrepreneurs like Febyana offer madumongso in various packaging options, catering to different preferences and occasions.
